Smoked Fish
As you will find with Crowley’s of Suffolk, everything we do is the best of what Tim Crowley has found. Our fish is no exception.
Other smoked trout is almost exclusively harvested in fresh water rivers. This produces flesh with an unavoidable “muddy” background which can be quite unpleasant.
Our Steelhead Trout is harvested in the clear salt waters around the Isle of Bute. It is cured and smoked entirely by hand on the island and has a gentle, sweet flavour and is not too oily. The feedback we have from our customers is that it is the best they have tasted.
We use only Atlantic Salmon exclusively from Scotland and traditionally smoked and cured to produce a firm flesh which delivers a delicate yet full flavour which we believe to be the best.
